Dessert cheesecake with strawberries


We grind the biscuits, with the help of the food processor, we melt the butter and we mix the two ingredients. These will form the top of our cake. We take a round shape and put the mixture of biscuit and butter, press and flatten well to have a uniform top.


Using the food processor, we will mix the ingredients for cream 1, as follows. Put the cream cheese and start mixing slowly, gradually add the sugar when it has incorporated, add the whipped cream and then the well-blended and seedless strawberries. These were washed and cut into smaller pieces, after which I blended them and passed them through a sieve so that they did not have seeds that would disturb the taste.

Meanwhile, we will put the milk on the fire and heat it so that it is warm, not boiled, because in it we will add gelatin, and if the milk is boiled, it will cut the effect of the gelatin. The gelatin will be hydrated in cold water, and then added to warm milk to dissolve evenly. Mix well to be dissolved in milk and add it over the rest of the ingredients for the cream, continuing the homogenization in the robot. The cream will be added over the counter and will be refrigerated for at least 5-6 hours or, most preferably, overnight.

The next morning, we will prepare the cream with number 2 and the jelly. Put the cream cheese and start mixing slowly, gradually, add the sugar when it has incorporated, add the whipping cream. Hydrate gelatin in water. Meanwhile, we will put the milk on the fire and heat it so that it is warm, not boiled, because in it we will add gelatin, and if the milk is boiled, it will cut the effect of the gelatin. The gelatin will be hydrated in cold water and then added to warm milk to dissolve evenly. Mix well to be dissolved in milk and add it over the rest of the ingredients for the cream, continuing the homogenization in the robot.

When it is ready, add it over cream number 1 and leave it to harden for at least 2 hours.

Put a pot on the fire and add the strawberries and sugar and let the sugar melt and soften the strawberries, so you can blend them. We will blend them and pass them through a sieve so that they have no seeds. We hydrate the gelatin in water and we will add it in this syrup, when it is warm. Mix well to dissolve the gelatin and, only after checking that the cream number 2 is hardened, then we can add the jelly.

Decor to your taste, I decorated with blackberries and melted chocolate as you can see in the photo.

I got about 12 servings.
