Ingredients for Making Carrot Pie with Lemon

For the test:

  1. Wheat flour 2 cups
  2. Grated carrots 3 cups
  3. Sugar 2 cups

  6. Lemon zest 1 tablespoon
  7. 2.5 teaspoon baking powder

For cream:

  1. Butter 200 grams
  2. Lemon 1 piece
  3. Soft cheese 230 grams
  4. Powdered sugar 5 cups or to taste

Cooking carrot cake with lemon:

Step 1: prepare the flour.

The first thing we’ll do is prepare the flour. Set a sieve on a large bowl, pour the right amount of flour into it and sift it. During this process, it is saturated with oxygen and gets rid of flour lumps, which will make the dough smoother. We set the bowl with flour aside.

Step 2: chop the carrots.

Now go to the carrots. We rinse it under running water and peel it with a knife. Then put in a blender bowl and grind at medium speed into chips. Carrots can also be chopped using a regular grater.

Step 3: prepare the lemon for the cream.

We wash the lemon thoroughly under hot running water, wipe it dry with a kitchen towel and put it on a cutting board. With a sharp knife, cut the citrus in half and squeeze the juice. It is easier and faster to do this, of course, with the help of a juicer, but if you do not have it, then squeeze the juice with your hands into any convenient cup or plate.

The remaining lemon halves, rub on a fine grater. For our cream, you need 1 tablespoon of zest.

Step 4: prepare the dough.

After this, pour salt, grated nutmeg, cinnamon, ginger and baking powder into the sifted flour, thoroughly mix everything with a tablespoon.

Next, wash the eggs under running water and break into a deep bowl. Add sugar and vegetable oil to them. Beater with a mixer at medium speed until smooth. Then we slow down and gradually introduce the flour mixture. Beat the mass until the dough acquires an even consistency. After that, turn off the mixer, put the crushed carrots in the dough and mix with a tablespoon.

Step 5: bake the cake.

Preheat the oven to 175 degrees Celsius. Lubricate the baking containers with a small amount of vegetable oil and pour the dough into molds. Bake the cakes for 20 to 25 minutes until cooked. Then we take it out of the oven and leave it to cool right in the forms for 10 minutes.

Step 6: prepare the cream.

In the meantime, fragrant cakes cool down, we will do the cooking of the cream. In a separate deep bowl, spread the cream cheese, butter, lemon zest and 3 tablespoons of lemon juice. Beat the cream with a mixer at medium speed until fluffy, gradually adding powdered sugar.

Step 7: make a cake.

Now we proceed to the most interesting part - the formation of the pie.

We spread the cake on a beautiful dish for serving, grease it with an even layer of cream, then we lay the next cake and also coat with cream, after we put the last cake, spread all the remaining cream on it and evenly distribute it throughout the cake. All dessert is ready to serve.

Step 8: serve the carrot cake with lemon.

Carrot pie is served at room temperature for dessert, afternoon snack or breakfast, along with hot tea, milk or white juice. As decoration, you can use chopped nuts, chocolate chips, coconut, as well as fruits and berries. In any case, the cake is very tasty and incredibly aromatic.

Recipe Tips:

- It’s not necessary to add fragrant spices to pastries, it all depends on your taste.

- You can check the readiness of the cake using a regular toothpick. We pierce the baking center, take it out and look, if there are raw traces of dough on the toothpick, then we’ll bake the cake for a few more minutes, and if it remained clean, then the cake is completely ready and you can get it out of the oven.

- If you do not have 3 identical baking dishes, then cakes can be prepared either in one handicap, but in three sets. Or bake one and divide into 2 - 3 thin cakes, while the baking time will increase to 40 - 50 minutes.
