Raffaello Cake


The ingredients for the preparation of the cake "Raffaello"

Cooking Raffaello Cake:

Step 1: Separate the whites from the yolks and cool them.

Before direct use, the eggs must be washed thoroughly and at the same time, gently, then separate the proteins from the yolks using an egg separator, placing it on a glass or on a deep plate. Squirrels for a while (approximately minutes 20 - 30) put in the refrigerator.

Step 2: Prepare the coffee and almonds.

Grind coffee beans in a coffee grinder, put the Turk on a fire, pour water, pour coffee and boil until a brown crust forms, then remove it. Try not to bring coffee to a boil. Meanwhile, preheat the oven up to 160 - 170 degrees. Grind the almonds in a blender or in a coffee grinder, then add flour and 0.5 cups of sugar, stir well

Step 3: Beat the whites.

Salt the egg whites, then beat with a blender or mixer in a thick foam, then add the remaining sugar, beat until the sugar grains dissolve. Cover the baking sheet with special parchment baking paper and grease it with sunflower oil.

Step 4: Prepare the mixture for the cakes and bake them in the oven.

The chopped nuts with sugar and flour must be combined and thoroughly mixed, and then evenly placed on a baking sheet with paper, sent to the oven and baked for 45 - 50 minutes. When the cake is ready, it must be cooled and freed from the paper on which it was baked.

Step 5: Prepare the cream for the cake.

Cold coffee needs to be filtered through a small sieve, add gelatin to it and heat this mixture in the microwave within 10 - 15 secondsthen stir well with a tablespoon to dissolve the gelatin. In a jar (liter), use a blender or mixer to whip the cream, add the icing sugar, beat again until the icing is dissolved, then pour in a fine stream of the coffee mixture and whip again. Put the cream in the refrigerator for 1 to 2 hours.

Step 6: Lubricate the cakes with cream.

Cakes can be cut into two, but preferably four equal parts, each of which should be greased with a cream prepared in advance. Decorate the cake with Raffaello candies or just sprinkle with coconut, then send it to the refrigerator for 3 to 4 hoursso that it is well saturated.

Step 7: Serve the Raffaello Cake.

This "paradise pleasure" is served cold for dessert on a special tray for cakes on weekdays or at any celebration, cut into portioned pieces with a sharp knife and placed on portioned plates. You can drink it with fruit juices, and green or black tea, and cocoa with milk, and milkshakes. Good appetite!

Recipe Tips:

- - Try to very carefully separate the squirrels from the yolks so that the cakes (meringues) are airy, even a small drop of yolk can damage the dough.

- - The dishes in which you mix the ingredients for the cake should be absolutely dry and clean.

- - For decoration, you can leave a little whole almonds, which need to sprinkle the top cake and grease with cream.
