Grilled Mustard Chicken with Green Bean Coleslaw


Ingredients

  • Nonstick vegetable oil spray
  • 4 teaspoons mustard seeds, divided
  • 1 9-ounce package frozen French-cut green beans, thawed, patted very dry
  • 2 cups very thinly sliced green cabbage
  • 1 small sweet onion (such as Maui or Walla Walla), very thinly sliced
  • 1 tablespoon chopped fresh tarragon
  • 2 tablespoons white balsamic vinegar
  • 3 tablespoons Dijon mustard, divided
  • 4 boneless chicken breast halves with skin

Recipe Preparation

  • Coat grill rack heavily with nonstick spray. Prepare barbecue (medium-high heat). Toast 1 teaspoon mustard seeds in skillet over high heat until beginning to pop, 3 to 4 minutes. Place seeds in large bowl. Add green beans, cabbage, onion, and tarragon. Whisk oil, vinegar, and 2 teaspoons Dijon in bowl. Mix into slaw; season with salt and pepper.

  • Whisk egg white and 2 tablespoons plus 1 teaspoon mustard in small bowl. Sprinkle skin side of chicken with salt and pepper. Brush thickly with mustard glaze; sprinkle with some of remaining mustard seeds.

  • Place chicken, skin side down, on grill. Sprinkle chicken with salt and pepper; brush with glaze and sprinkle with remaining mustard seeds. Grill 5 minutes. Turn chicken. Grill until cooked through, about 5 minutes. Top with slaw and serve.

Grilled Chicken Salad

I love salads, whenever i feel like not having a meal. All i prefer is having a bowl of salad. You can make salad whatever way you like. This one is my favorite since it has honey mustard garlic dressing. I love it so much.

Moreover making grilled chicken can be a bit tricky. But if you follow my instructions you will get perfect grilled chicken all the time.

I used my home grown baby spinach and lettuce for this salad which made me even more happy.


Recipe Summary

  • ¼ cup distilled white vinegar
  • ⅓ cup vegetable oil
  • ⅓ cup soy sauce
  • 1 lime, juiced
  • ½ lemon, juiced
  • ¼ cup sherry
  • 2 tablespoons ground mustard
  • 2 teaspoons honey
  • 4 cloves garlic, crushed
  • ⅓ cup brown sugar
  • 2 tablespoons lemon pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon rosemary
  • 1 teaspoon salt

In a large glass bowl, stir together the vinegar, oil, soy sauce, lime juice, lemon juice, sherry, mustard, and honey. Mix in the garlic, brown sugar, lemon pepper, oregano, rosemary, and salt. Place the chicken in the mixture. Cover, and marinate in the refrigerator 8 hours or overnight.

Preheat the grill for high heat.

Lightly oil the grill grate. Discard marinade, and place chicken on the grill. Cook 6 to 8 minutes per side, until juices run clear.

  • DRESSING:
  • 1 head green cabbage (8 to 10-cups)
  • 1 large carrot, peeled and finely shredded (hand-squeeze out any excess moisture completely)
  • Note: For a shortcut, I sometimes buy pre-shredded cole slaw mix. It works just fine.
  • 3 green onions (or to taste)
  • 1 teaspoons celery seeds (optional, or to taste)
  • 1 cup mayonnaise (Hellman's or Best Foods)
  • 1/3 cup milk (light cream even better)
  • 1/3 cup buttermilk
  • 3 tablespoons white vinegar
  • 3 tablespoons fresh lemon juice (use fresh only, not bottled)
  • 1/3 cup white sugar, plus
  • 2 tablespoons white sugar*
  • 1 teaspoon garlic powder

Grilled Chicken Caesar Salad with Avocado

In high school we had a favorite place to go for lunch, or I should say two places, one was Knox’s (great burgers, no longer there) and the other was the Round House. Yeah, the restaurant was/is round. My sister and I loved their “combination salad” which consisted of head lettuce, tomato, boiled egg with cottage cheese and covered with a French dressing that was so good I still make that salad for my husband and myself.

I haven’t met anyone that has ever eaten cottage cheese and boiled egg on a salad and it has to be head lettuce and I do buy a bottled French dressing and doctor it up a little with some paprika, lemon juice and a dash of Worcestershire sauce.

I don’t know about you but I could eat salad every night as the main course and I have posted quit a few here that can stand on their own as a main dish others could have some protein added to them and you have a filling dinner salad.

When my kids were younger and still at home, they wouldn’t touch a salad with a ten foot pole. I remember my husband paying one of our sons to eat some fruit. They grew out of that picky stage and enjoy cooking and eating all different types of foods and cuisines.

BLAST FROM THE PAST: I posted this Grilled Romaine Salad after seeing someone online grill some romaine. I would have never come up with that idea on my own I’m sure.

Caesar dressing ingredients.

I split the chicken breast to make them thin so they would cook fast. I sprinkled with smoked paprika but you can use whatever spice you want.

These cooked really fast on a hot grill.

Mix all the dressing ingredients and chill until ready to serve.

After frying the bacon and draining off the grease I added about 1 tablespoon of olive oil and brown my homemade croutons. Were they ever good with the bacon pieces stuck to the bottom of the pan!

I had cooked the chicken earlier in the day so I put it in a skillet to warm up a bit.

Peel and run the avocado under cold water then cut in medium size pieces.

Roll up the romaine lettuce and cut into 1/2″ strips.

Toss the romaine with some of the caesar dressing and put on your plate/bowl, top with chicken and avocado.

Top with the fried bacon and croutons and pass the dressing to anyone who may want a little more.

GRILLED & STUFFED CHICKEN CLUB SANDWICH

• 2 pounds Boneless Chicken Breasts -cut into 8 slices
• Salt and Fresh Ground Pepper to taste
• 2 teaspoons Extra Virgin Olive Oil
• 1 Large Loaf of French or Italian Bread
• 3/4 cup Mayonnaise
• 1/4 cup Heinz Spicy Brown Mustard
• 1-1/2 pounds Thick Slab Bacon -Cooked Crisp and Drained on Paper Towels
• 4 Ripe Tomatoes -Thinly Sliced
• 3 Medium Avacados -Pitted, Peeled and Thinly Sliced
• 8 Large Bib Lettuce Leaves

Directions:
Place the chicken slices between wax paper and pound to about 1/8-inch thickness.

Season lightly with salt and pepper.

Heat the oil in a large skillet and sauté the chicken until golden -about 1-2 mins per side.
Set aside.

Slice the loaf of bread horizontally and set aside.

Combine the mayonnaise with the spicy brown mustard in a small bowl.

To build the sandwich:
Spread the mustard-mayonnaise on each half of the bread.
Arrange the chicken slices on the bottom layer of the bread.
Top with the bacon, tomatoes, avacados, roasted red pepper strips and lettuce leaves.
Season with salt and pepper to taste.
Top with the other bread half.
Garnish the sandwich loaf with toothpicks stuck through with olives and onions.


Wiess Cooks!

  • 4 4-6 oz. boneless chicken breasts
  • 2 teaspoons olive oil
  • salt and pepper to taste

Heat a large frying pan on medium heat for 30 seconds, then drizzle about a tablespoon of olive oil into the pan and allow to heat through. Place chicken breasts in pan and swirl around to make sure oil has touched all four chicken breasts. Salt and pepper the chicken breasts to your desired flavor. Cook chicken breasts without flipping or stirring for 7 or 8 minutes until brown and golden on the bottom side. Drizzle the tops of the chicken breasts with the second teaspoon of oil. Flip and cook another 7-8 minutes or until chicken breast is cooked thoroughly. Slice into the thickest part of one of the chicken breasts to check for done-ness. You should not see any pink color at all.

Serve with a cold salad or chunky salsa and warm side dishes like corn on the cob, Spanish rice, or mashed potatoes.
